Holy moly, I love guacamole
My husband and I took another road trip today and while driving home, we were listening to an interview on NPR. They were interviewing someone who owned a restaurant called Haute Taco, wherever that is. The only thing that stuck in my mind was the guacamole. And as soon as we got home and unpacked, I went out for the fixins.
Here's the quickie recipe:
GUACAMOLE
2 ripe avocados
1 plum tomato, diced
1 1/2 Tbsp. red onion, finely diced
1 1/2 Tbsp. chopped cilantro
2 tsp. lime juice
salt & pepper, to taste
Cut avocados in half and scoop into bowl, removing pits. Mash avocado with fork. Add remaining ingredients. Serve with chips.
UPDATE: Found it! I knew it was in Wisconsin somewhere. {Haute Taco}.

I am so making this tomorrow! I love guacamole and tomorrow is football all day, so I think the two will go nicely together...=)

If you ever get to Santa Fe, go eat at Gabriel's. Their guacamole is to die for. This looks like a good recipe! I'm trying it this week.

My grandmother had avocado trees in her backyard so I really love them any way I can get them . An avo.and bacon san with a little mayo is great and of course I do really really like guac.

Darn. Do you know how far it is to a store that carries avocados? Avocados that anyone would want to eat anyway. Not like the first avocado ever grown, which is the one they still have at the store in our little town. All of their produce belongs in a museum actually...

MMMMmmmm, I LOVE guacamole, and your recipe is perfect. The only thing I'd leave out is the cilantro. For some reason, I just hate the way it tastes. NPR also did a piece on cilantro "The Great Cilantro Divide -- either you love it or you hate it.
