How I like 'em

Eggs with salsa
I realized that I hadn't updated this blog all week. And because today is a snow day here in Maryland, I've made myself a nice little breakfast. I like my eggs (3 whites, 1 yolk) scrambled and with fresh salsa on top. And I'm loving this ginger marmalade I just bought. Have a beautiful day, all.

I like salsa on my eggs too,and baked potatoes and hamburger.most any thing. That is a beautiful plate that your egg are on.I will have to look for ginger marmalade.

These eggs were mostly fresh. They expired today which is why I used so many of them.
And yeah, I just get rid of the yolks. Unless there's a recipe that calls for them.

Yum! I enjoy a good scrambled egg with salsa as well. I have never heard of ginger marmalade, but it sounds good. Lovely plate as well.

I may need to try that ... what do you do with the yolks you separate or do you use a variation of Egg Beaters? Now I am thinking next trip to Zabar's I need some of that ginger spread .. they were empty or Zabar's version of empty yesterday when I went to get something for lunch and dinner and a few snacks ...
